How it runs

Open the link, type a name, take a shift. A volunteer who has to make an account before they can help is a volunteer you frequently lose at that step.
Lock claims the night before so the board stops moving, and you still keep the record of who is on what.
Yes, up to the per-person cap you set — three at once by default, or no cap at all if you set it to zero. Shifts they have finished stop counting against it.
Not on one item — an item is taken by exactly one person, which is the guarantee the whole thing rests on. Paste the shift twice if it needs two people on it.
The organizer page has a recap — the tally and everyone who carried a piece — that copies to the clipboard in one tap, ready to paste back into the volunteer channel.
They cancel it themselves and the shift goes back on the board, or you release it from the organizer link. Either way the shift returns exactly as it was.
